Selection of the best vineyard blocks due to their outstanding quality and their pyrazinic profile, characteristic of the varietal. In stainless steel tanks, a cold pre-fermentative maceration is carried out for 2 days, followed by fermentation at 24–26 °C for 7 days. Once fermentation is complete, an extended maceration is performed for 15 days.
18 months of aging in first-use French and American oak barrels, followed by 6 months of bottle aging.
Richard Bovín
Cabernet Sauvignon 100%
Deep ruby color with garnet hues and great intensity. On the nose, it shows a complex and elegant profile, dominated by ripe black fruits such as cassis, blackberry, and plum, accompanied by typical varietal notes of fresh green pepper, graphite, and subtle herbal touches, integrated with barrel aging contributions reminiscent of vanilla, cocoa, and sweet spices. On the palate, it presents a firm and structured entry, with good volume and a marked tannic backbone; fine-grained tannins that provide texture and aging potential, balanced by acidity that brings freshness and extends the finish.
Ideal to pair with grilled red meats, fatty cuts such as skirt steak, rich pasta stews, and hard cheeses like Gruyère.
