Harvest manually in small plastic bins. Double sorting of the grape cluster and individual grapes. Manual de-stemming to preserve the grain as whole as possible.
The destemmed grapes are vatted in small stainless-steel tanks. A pre-fermentation cold maceration is carried out for 5 days to extract the delicate primary aromas—alcoholic fermentation with selected yeasts. Malolactic fermentation.
