Harvest takes place at the optimal point of phenolic ripeness. In stainless steel tanks, a cold pre-fermentative maceration is carried out for 2 days, followed by fermentation at temperatures between 24 and 26°C over a period of 7 days. Fermentation is conducted using 10% indigenous yeasts and 90% selected yeasts. Once this stage is completed, the wine undergoes an extended maceration for an additional 13 days. Malolactic fermentation is completed through the action of natural bacteria present in the winery.
Sixty percent of the wine is aged for 12 months in first- and second-use French and American oak barrels, while the remaining portion rests in stainless steel tanks. Afterwards, the wine continues its evolution with an additional bottle aging period of 6 to 12 months.
Deep red in color with violet highlights and medium intensity. On the nose, it stands out for its aromas of black fruits such as plum and blackberry, accompanied by subtle spicy notes derived from its aging process. On the palate, it offers a smooth entry with good volume and structure, supported by round and mature tannins.
It is an ideal wine to pair with rich red meats such as ribeye steak or skirt steak, as well as pasta dishes with intense sauces. Its structure and fruity profile create a harmonious balance with these types of dishes.
