The destemmed grapes are placed in small stainless steel tanks. A cold pre-fermentative maceration is carried out for 5 days to favor the extraction of delicate primary aromas. Alcoholic fermentation then takes place at 21–23°C for 8 days using selected yeasts. Malolactic fermentation is carried out in barrels.
Forty percent of the blend is aged for 24 months in French and American oak barrels. Another 40% is aged for 12 months in French and American oak barrels, while the remaining 20% spends 3 months in French oak barrels.

100% Merlot (40% Merlot 2021 | 40% Merlot 2022 | 20% Merlot 2023)
Elegant and complex profile, where ripe red fruit and plum notes are integrated with subtle spicy nuances, cocoa, and vanilla contributed by up to 24 months of barrel aging. On the palate, it shows good structure, round tannins, and an enveloping texture, with a persistent and balanced finish.
Ideal to pair with grilled ribs or lamb stew, pine mushroom risottos, and medium-intensity semi-hard cheeses such as Fontina or Gruyère.
